Steve,
It's less about diameter than width and offset.  You can put a 7x16 
wheel with 11mm offset on the car with 205/55-16's and likely have no 
fender issues.  That tire size gets you lots of options, including DOT 
track tires.  That said, finding 7x16 wheels will be a little work.  
Fish on the e28 boards.
